Counting the Points

Okay, I have officially signed up again for WeightWatchers. I don't know why I didn't consider being my heaviest weight ever as one of the things to "look forward" to in marriage, but it has definitely come my way! Now that I'm on a diet my trips to the grocery store have a different focus: Veggies! Veggies are the only items that do not rack up points! (In case you are not familiar with WeightWatchers, it works on a point basis, where every food is worth a certain number of points, based on calorie, fat, and fiber content, and in my case, I am allowed 20 pts a day.) Too bad veggies are also quite expensive right now.
I had an odd craving for yellow squash yesterday so I decided to buy one, not caring what the price was. And I'm so glad I did! Who would have thought that Michael, who is veggie illiterate, would actually like squash?? I have learned that he will eat veggies if I make him commit to them before the food is on the table. For example: I asked him if he would eat any, and how many, because I did not want to cook too much (I don't care for leftover cooked veggies). So he told me he would try two pieces of each veggie. And he enjoyed it! Well, except for the green bell peppers. But he liked SQUASH!
So tonight, in attempts of eating as few points as possible, I make lemony fish on the stove, my mom's special recipe rice (which Michael loves, and was a backup if the vegatables did not fly with him), and grilled squash, onion, and green pepper on my handy George Foreman. I am learning a secret: Healthy can actually taste good!!! Did you know that you can forego the ranch, butter, sour cream, cheese, etc, and still have flavor? Wow!!

I write about food a lot, don't I? I guess I just love cooking! I love my internship, too, and would love to tell you all about it, but a lot of it is confidential so it's just easier to not get into it. And school, well, school is . . . um . . . well, I have senioritis I guess! I just want to be done and out!!!

I just had to include a pic of another example of what grocery shopping is like for us! Notice the giant cans? Michael takes lunch everyday to work, and I haven't had the time or energy to make cookies for him, so he decided he wanted pudding. A LOT of pudding. :) And he was going through apple sauce so fast that we figured why not buy the economy size can of that, too? I had never had canned pudding before, and it's actually quite good! (not that I can have any now that I'm on a diet! It's back to sugar free/fat free pudding mix for me! Between that and Crystal Light, and sugar free yogurt, aspartame might as well be one of my daily food groups. :P

Michael and I got to go "home" to Oregon last weekend, and it was a wonderful time. I didn't get to see everyone that I wanted to, but we got to spend quality time with both of our families and we finally got to see our dogs! The horrible thing was, Buddy (introduced in my first entry), acted like he didn't even know Michael and me! I almost cried! How sad is that?? THAT is how dog-deprived we are here in our tiny apartment. Thankfully, Cindy, the Collins dog, knew me quite well, and Buddy did warm up to us the next day. I am growing very discontent with having only a bonsai as a pet!

Well, I guess we're going to try to catch a movie at the dollar theater! I hope you all are doing well!
